Tuesday Talk: IKEJIME Demonstration and Talk

Ikejime is the most humane method of killing fish, and it is known to significantly improve the quality and shelf-life of the meat. Dr. Uchida is an international expert in this method and Kate Masury will be assisting him in demonstrating and explaining this technique. Recently caught fish will be used for this demonstration. Fish will be cooked on site and sampled. If you would like to sample the cooked fish, please register for the event to ensure that we have enough fish available.
